{"id":201,"date":"2015-11-15T21:09:06","date_gmt":"2015-11-16T03:09:06","guid":{"rendered":"http:\/\/www.fomby.com\/momma\/?p=201"},"modified":"2015-11-15T21:25:38","modified_gmt":"2015-11-16T03:25:38","slug":"miniature-christmas-fruitcakes","status":"publish","type":"post","link":"https:\/\/www.fomby.com\/momma\/miniature-christmas-fruitcakes\/","title":{"rendered":"Miniature Christmas Fruitcakes"},"content":{"rendered":"<p><strong><em>Miniature Christmas Fruitcakes<\/em><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>1\/2 cup light molasses<\/p>\n<p>1\/4 cup water<\/p>\n<p>1 teaspoon vanilla extract<\/p>\n<p>1 package (15 ounces) raisins<\/p>\n<p>1 pound mixed candied fruit, chopped<\/p>\n<p>1\/2 cup margarine, softened<\/p>\n<p>2\/3 cup sugar<\/p>\n<p>3 eggs<\/p>\n<p>1 cup plus<\/p>\n<p>2 tablespoons\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 all-purpose flour<\/p>\n<p>1 teaspoon ground cinnamon<\/p>\n<p>1 teaspoon ground nutmeg<\/p>\n<p>1\/4 teaspoon baking soda<\/p>\n<p>1\/4 teaspoon ground allspice<\/p>\n<p>1\/4 teaspoon ground cloves<\/p>\n<p>1\/4 cup skim milk<\/p>\n<p>1\/2 cup chopped walnuts<\/p>\n<p>In a saucepan, combine molasses, water and vanilla; add raisins and bring to a boil. Reduce heat and simmer for 5 minutes. Remove from the heat and stir in fruit; cool. Meanwhile, in a mixing bowl, cream margarine and sugar. Add eggs, one at a time, beating well after each addition. Stir together dry ingredients; add to creamed mixture alternately with milk. Stir in fruit mixture; mix well. Fold in nuts. Spoon into paper-lined miniature muffin cups, filling almost to the top. Bake at 325 for 22-24 minutes or until cakes test done. Cool on wire racks. Store in an airtight container.
